In this class you'll learn to appreciate and identify between the variety of sea salts harvested from around the world - each with their own distinct flavor and color from white, pink orange, gray to even black! Learn to enhance the flavors and finish of foods in defining the perfect sea salt for your cooking needs. We'll also learn how to create salt crusts, encasing a whole pork loin and potatoes in a salt crust for a dramatic presentation and tender, moist mouthwatering results! Recipes include: Roasted Pork Loin in Herb Salt Crust; Salt Crusted Oven Roasted Red Skin Potatoes; Artisan Tomato Salad with International Sea Salts - to best sample the variety of artisan sea salt flavors, we have created this fresh tomato salad to showcase five specialty salts - hawaiian red haleakala sea salt, australian pink seas salt, oak smoked chardonnay sea salt, hawaiian black kilauea sea salt and a french fleur de sel sea salt; Create our own finishing salts - lavender and orange; Duo of Bittersweet Chocolate Truffles dusted with Orange and Lavender Finishing Salt. $75 per person
