stock INTRODUCTION TO STOCK MAKING Wednesday, March 21st 6 PM In this class, we'll create a rich, flavorful chicken stock with fresh chicken, french vegetable mirepoix and herbs. Then we'll use our homemade chicken stock to create three totally different soup varieties-a broth based soup, a bisque soup and a cream soup-showing the diversity one can achieve using a stock. Recipes include: Homemade Chicken Stock; French Mirepoix; Chicken, Potato and Leek Soup; Roasted Butternut Squash Bisque; Cream of Tomato Soup. $65 per person
